Instant Pot Chicken and Rice Soup

This Instant Pot chicken and rice soup is so quick and easy to make with simple everyday ingredients. It's a comforting and nutritious recipe, full of juicy chicken, hearty vegetables, and tender rice.

INGREDIENTS

butter, yellow onion, garlic, carrots, celery, salt, pepper, dried basil, dried parsley, dried oregano, chicken breast, long grain white rice, chicken broth, lemon juice, and fresh parsley

Set your Instant Pot to sauté. Add the butter and onion. Sauté. Add in the garlic, carrots, celery, salt, basil, parsley and oregano and stir well.

Add in chicken breasts, rice and broth.

Pressure cook the soup.

Remove the chicken breasts and shred. Add the chicken back into the soup along with the lemon juice and parsley.
