Who doesn’t love an easy one pot pasta? This Cheesy Salsa Beef Pasta uses a mix of salsa and beef stock to add flavour to it without having to put in a lot of work!
Place olive oil in a large pot or dutch oven over medium heat. Add the ground beef. Season with salt and pepper and brown the beef for 4 to 5 minutes.
Add in the diced onion and minced garlic and sauté for another 2 minutes.
Add in the salsa, beef stock, and pasta. Stir to combine and increase the heat and bring the liquid to a boil.
Once boiling, turn the heat down to a simmer and let the pasta cook for 8 to 9 minutes, stirring occasionally so nothing gets stuck to the bottom.
Add in the shredded cheese and corn, stir, and let cook for another 2 to 3 minutes or until the pasta has cooked through.
Notes
The amount of beef stock you'll need really depends on your salsa. If you have a liquidy salsa, you'll need less, if you have a thicker salsa, you'll need more.
