This smoky Bacon Tomato Soup is comfort in a bowl! It comes together quickly and easily all in one pot. The bacon provides a smoky flavor that really complements the tomatoes and adds a new layer of flavor to the classic soup.
In a pot over medium heat, add the bacon pieces. Cook for 5 to 6 minutes, stirring occasionally so the bacon cooks evenly.
Add the diced onions and garlic and saute for another 2 to 3 minutes.
Add the tomato paste and continue to saute for another 2 to 3 minutes. Add the flour and continue to cook until the flour has been incorporated into the paste.
Add the sugar and canned tomatoes. Break up the tomatoes with a wooden spoon by pressing them against the sit of the pot. Then add the broth and one or two bay leaves.
Simmer the soup for 30 minutes. When done, remove the bay leaves and use an immersion blender, and blend the bacon tomato soup until smooth.
Notes
Add salt to taste if you desire. I find the bacon to be salty enough to skip the salt.
