This slow cooker beef tips and gravy is a classic recipe that the whole family will love. Tender pieces of beef slowly cooked with some mushrooms and onions in a rich, flavorful gravy, this easy slow cooker recipe comes together in just a few simple steps!
2poundssirloin tips, or beef stew meat, cut into 1-inch pieces
1bagfrozen pearl onions, 12-oz or 14-oz
¼cuptomato paste
3tablespoonsWorcestershire sauce
1teaspoongarlic powder
1teaspoononion powder
1teaspoondried oregano
1teaspoonkosher salt
½teaspoonblack pepper
8ouncesmushrooms, quartered
2cupsbeef broth, low-sodium
3 to 4tablespoonscornstarch
Instructions
Add the beef, frozen pearl onions, tomato paste, Worcestershire sauce, garlic powder, onion powder, dried oregano, salt, and pepper to the slow cooker. Mix until the beef and onions are well coated and the tomato paste is evenly coating everything.
Add the mushrooms and pour the beef broth to the slow cooker.
Cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is tender.
About 30 minutes before serving, whisk together the cornstarch with 3 tablespoons of water in a small bowl until smooth. Stir the cornstarch mixture into the slow cooker. Finish cooking the last 30 minutes or until the gravy has thickened to your liking.
Garnish with chopped fresh parsley. and serve the beef tips and gravy over mashed potatoes or side of choice.
