Made with just a handful of everyday ingredients, this Slow Cooker Honey Chipotle Chicken is so easy to make. Put everything into a crockpot and come back in three hours to the tastiest shredded chicken! It's sweet, it's spicy, and it's oh-so-flavourful!
Combine the boneless skinless chicken, honey, chicken stock, onion powder, garlic powder, paprika, salt, pepper, and chipotle chiles, and adobo sauce in a slow cooker.
Toss to coat the chicken fully with the sauce.
Cook for 3 hours on high and up to 5 hours on low. Chicken breasts are cooked through when the internal temperature reaches 165˚F (74˚C).
Using two forks, coarsely shred the chicken in the sauce.
Stir in the lime juice. Add more salt or lime juice, to taste.
Notes
TO MEAL PREP: Allow the shredded chicken to cool and transfer to an airtight container and store in the fridge for up to 5 days. Reheat in the microwave. TO FREEZE: Allow the shredded chicken to cool and transfer to a freezer-safe bag and freeze for up to three months. Thaw fully before reheating.
