Whether you want to stuff this shredded Greek chicken into a pita, serve it up in a bowl, salad, or pasta, this is the perfect recipe for a weeknight dinner! It only takes a few minutes of hands-on time then the slow cooker does the rest!

Ingredients You'll Need

chicken broth — you can use regular or low sodium chicken broth or stock. You can also make homemade chicken or bone broth. It's very easy to make, here's how I make homemade bone broth in the slow cooker.

lemon — you'll need a fresh lemon as this recipe uses lemon juice and lemon zest. I personally love adding extra lemon juice to this as I love the fresh, zesty flavor.

seasoning — this recipe uses dried oregano, dried thyme, kosher salt, and pepper. You likely have all of this in your pantry already!

chicken — I use boneless, skinless chicken thighs but you can also make this with chicken breasts!

onion & garlic — to add extra flavor. Feel free to add more garlic!

How To Make This Slow Cooker Greek Chicken Recipe

  • In a bowl, whisk together chicken broth, lemon juice, dried oregano, dried thyme, salt, and black pepper.
  • Add the boneless chicken thighs, sliced onions, and minced garlic to a slow cooker.

  • Pour the mixture into the slow cooker.
  • Cook on HIGH for 3 to 4 hours or LOW for 5 to 6 hours.

  • Using two forks, shred the chicken breasts in the crock pot in the liquid. Add the lemon zest and stir until well combined. Add more lemon juice as needed.
  • Serve warm with tzatziki sauce along with rice, pita, or a Greek salad!

Recipes Variations

  • You can use chicken breasts in place of chicken thighs.
  • If you have shallots but no onions, you can easily swap them.
  • If you want the onions to melt in with the chicken, you can dice them finely before adding them to the slow cooker.
  • Double the chicken! Make sure to double the liquid and seasoning as well. No need to change the cooking time.

Tips and Notes

  • I always use fresh lemon juice over bottled juice as it tastes more fresh and is less likely to have a bitter aftertaste.
  • If you don't want to shred the chicken, you can remove them from the crockpot and slice them before adding it back to the slow cooker to soak in the liquid.
  • Avoid opening the slow cooker lid while the chicken cooks. It'll let out the steam that it worked so hard to build up and the chicken will take longer to cook.
  • Make the shredded chicken crispy by transferring the shredded chicken to a sheet pan and broiling in the oven for 2-5 minutes on the middle rack, keeping an eye on it throughout. Be sure that the shredded chicken has the liquid from the crockpot on it to prevent it from drying out. 
  •  oil.
  • I would not recommend cooking the chicken from frozen. Make sure the chicken thighs has thawed before adding them to the crockpot!

Storage Tips

To freeze the shredded chicken, allow it to cool to room temperature, transfer it to a freezer-safe bag, and freeze it for up to three months. Thaw fully before reheating.

To store the leftover shredded Greek chicken, allow the chicken to cool to room temperature and then transfer them to an airtight container. Store in the fridge for up to 5 days. Reheat in the microwave.
