One Pot Chicken Broccoli Alfredo

Ingredients

  • pound chicken breasts diced into 1 inch pieces
  • salt and pepper
  • 2 tablespoons oil
  • 1 tablespoon Italian seasoning
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon flour
  • 2 cups broth vegetable or chicken
  • cup milk
  • cup heavy cream
  • 8 ounce bow tie pasta a bit more than 2 cups
  • 1 head broccoli cut into florets
  • ½ to ¾ cup freshly grated parmesan

Instructions

  • Season the cubed chicken breasts generously with salt and pepper.
  • In a large pot over medium heat, add the oil and then chicken in a single layer to sear them.
  • Sear the chicken pieces on both sides, for around 3 to 4 minutes. They don't have to cook all the way through as you'll continue to cook them in the next step.
  • Add the Italian seasoning, garlic powder, onion powder, and flour. Then immediately add the broth, milk, and cream. Stir to combine.
  • Add the pasta and stir until the pasta is mostly submerged in the liquid. Coat and let the pasta simmer for 8 minutes, stirring occasionally to prevent the bottom from sticking.
  • Add the broccoli on top and cover for another minute or two. Then stir the broccoli in and continue to simmer for another 5 minutes.
  • Add the parmesan cheese and stir until the parmesan has blended with the sauce and thickens it.
  • Serve with more parmesan on top if desired.
