Why You'll Love This One Pot Pasta Recipe
- You can make this one pot chicken alfredo with broccoli so quickly and easily! While not traditional alfredo, this one pot alfredo pasta gets the job done on a busy weeknight.
- You don't need anything fancy to make this chicken broccoli alfredo. Most of the ingredients were already in my kitchen. I only had to go out to buy the broccoli but you can sub in for frozen broccoli and save yourself the trip out!
- Everything is pretty much added to a large pan to cook and simmer. There isn't an easier recipe to make on a busy weeknight.
Ingredients You'll Need
- salt and pepper — a given! Season the cubed chicken with salt and pepper generously.
- oil — pick your oil of choice to sear the chicken in. I use olive oil, but you can use another oil such as canola, vegetable, or avocado oil.
- chicken — I use chicken breasts, but you can use chicken thighs as well.
- seasoning — I season the one pot pasta with Italian seasoning, garlic powder, and onion powder. You can change things up if you prefer. You can try using dried basil, sage, rosemary, thyme, etc.
- flour — a tablespoon of all-purpose flour will help thicken the sauce.
- liquids — this one pot pasta uses vegetable broth, milk, and heavy cream to cook the pasta and create the alfredo sauce. You can also use chicken broth, but I only had vegetable broth on hand. I use whole milk.
- pasta — I use cute little farfalle pasta (aka bow tie pasta).
- parmesan — parmesan will help thicken the sauce and adds wonderful flavor. There's no such thing as too much parmesan! Freshly grated parm is preferred over the bottles of pre-grated versions.
How To Make This One Pot Chicken Broccoli Alfredo Recipe
- Season the cubed chicken breasts generously with salt and pepper.
- In a large pot over medium heat, add the oil and then chicken in a single layer to sear them.
- Sear the chicken pieces on both sides, for around 3 to 4 minutes. They don't have to cook all the way through as you'll continue to cook them in the next step.
- Add the Italian seasoning, garlic powder, onion powder, and flour. Then immediately add the broth, milk, and cream. Stir to combine.
- Add the pasta and stir until the pasta is mostly submerged in the liquid. Coat and let the pasta simmer for 8 minutes, stirring occasionally to prevent the bottom from sticking.
- Add the broccoli on top and cover for another minute or two. Then stir the broccoli in and continue to simmer for another 5 minutes.
- Add the parmesan cheese and stir until the parmesan has blended with the sauce and thickens it.
- Serve with more parmesan on top if desired.
Tips and Notes
- Placing the broccoli on top to steam before stirring it in will make it easier to stir as the broccoli has softened a bit.
- I loooooooove adding a sprinkle of truffle salt over the pasta before serving.
- Add a pinch of red pepper flakes for a little extra heat.
- Not a fan of broccoli? Try baby spinach or peas for some greens in the alfredo pasta! You can also use cauliflower.
- The sauce will continue to thicken as the pasta cools.
- Add as much parmesan cheese as your heart desires!
