This Chicken and Cheese Tortellini Soup is one of my go-to dump and go recipes for the Instant Pot!

Dump and Go Dinner

There are days where I kinda just want to dump everything into a pot and call it a day. No sautéing, no waiting for a boil, nothing. That's where this super easy chicken and tortellini soup comes in. The most work involved is shredding the cooked chicken but I just toss it into my KitchenAid stand mixer and it shreds the chicken breasts for me in a minute. Other than that, everything goes into the Instant Pot, it pressure cooks, then I stir in spinach - easy!

What You'll Need To Make This Tortellini Soup

  • onions
  • shallots
  • garlic
  • salt
  • dried basil
  • dried oregano 
  • chicken breast
  • cheese tortellini: mine are not from dried. here's an example of similar one to the one I used
  • frozen peas
  • frozen corn
  • chicken stock
  • spinach
What You'll Need To Make This Tortellini Soup

How To Make Chicken and Tortellini Soup in the Instant Pot

In the Instant Pot, layer in the onions, shallots, garlic, salt, dried basil, dried oregano, chicken breasts, cheese tortellini, peas, and corn, before adding in the chicken stock.

Place the lid on, set the valve to sealing, and set the manual timer to pressure cook for 6 minutes.

When done, very carefully quick release. It may spew a little so you may have to do a controlled quick release where you QR a little bit at a time.

When done, remove the chicken breasts to shred, and stir in the spinach. Add the shredded chicken breasts back into the soup and you're done!

Tips and Notes

  • This recipe was only tested in the Instant Pot DUO 6qt
  • You can add the frozen peas and corn at the end along with the spinach if you'd like. They're more firm and vibrant if you add them at the end but flavour-wise, there isn't any difference. It's just one less thing I have to stir in at the very end so I put it in with everything else.
  • As mentioned above, this recipe uses pre-bought package tortellini from the grocery store, it is not dried tortellini.

Variations

  • switch the cheese tortellini to different types (different cheese, meat, mushrooms, etc)
  • swap out the frozen peas and corn for a different mix of frozen vegetables
  • seasoning can be changed, try Italian seasoning, Greek seasoning, Chinese Five Spice to switch up the flavours.

Ingredients

  • 1 onion, sliced

  • 400 grams cheese tortellini
  • 1 cup frozen peas
  • 1 cup frozen corn
  • 6 cups chicken broth, low sodium
  • 3 cups chopped spinach
