Gnocchi Pizza Bake

I love gnocchi. Like I loved it enough to attempt to make some by hand on a whim one day, did it wrong, got flour all over my kitchen, and actually tried again afterwards. If it wasn’t gnocchi, I would have probably called it quits. But I was determined to have gnocchi! But not to worry, for this super easy pizza inspired gnocchi pasta bake, you use store bought gnocchi (without boiling!) so from start to finish, it should take you less than 30 minutes! 

What You’ll Need To Make This Gnocchi Pizza Bake

Equipment:

  • 9×9 baking dish
  • tin foil

Ingredients:

  • pasta sauce (I used a sweet basil one)
  • shredded mozzarella cheese
  • baby spinach
  • pepperoni
  • potato gnocchi

How To Make This Easy Gnocchi Pizza Bake

Heat oven to 400F.

In a 9×9 baking disk, cover the bottom in a thin layer of sauce and then layer in shredded mozzarella cheese, baby spinach, pepperoni, gnocchi, the rest of the pasta sauce, pepperoni, mozzarella cheese, and pepperoni.

Cover the dish in tinfoil and bake for 15 minutes in the middle rack.

When done, remove the tinfoil and broil for 5 minutes or until the top layer of cheese has melted and pepperoni is crisp to your liking.

Store any leftovers in an airtight container.

Ways To Change Up This Recipe

  • switch up the pasta sauce (mushroom pasta sauce, roasted garlic pasta sauce, etc)
  • change the cheese (cheddar, parmesan, provolone, etc)
  • combine two different cheeses (ie topping with feta or goat cheese)

Gnocchi Pizza Bake

Yield: 5-6 servings
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

  • 650 mL pasta sauce
  • 320 grams shredded mozzarella cheese (or more)
  • 1-2 cups baby spinach
  • 48 pepperoni slices
  • 500 grams potato gnocchi

Instructions

  1. Heat oven to 400F.
