This slow cooker beef tips and gravy is a classic recipe that the whole family will love. Tender pieces of beef slowly cooked with some mushrooms and onions in a rich, flavorful gravy, this easy slow cooker recipe comes together in just a few simple steps!

The perfect cozy meal to be served over some creamy mashed potatoes, egg noodles, rice, or crusty bread, this slow cooker beef tips and gravy is the perfect family-friendly meal!

Ingredients You'll Need

Ingredients needed to make a slow cooker beef tips and gravy recipe.

Let's do a quick rundown of the ingredients and some subsitutions you can make!

sirloin tips — you can use sirloin tips or beef stew meat if you can't find any. You should be able to find some pre-cut sirloin at your local grocery store, but if not, you can always buy a sirloin steak and cut it yourself. I like to buy full steaks in bulk from Costco and cut them myself so I can leave some steaks whole in the freeze for a different meal.

frozen pearl onions — grab a 14-oz or 12-oz bag of frozen pearl onions from the store. Either is fine!

tomato paste — the tomato paste helps deepen the flavor and add richness to the gravy. If you're using a can of tomato paste, you can freeze what you have leftover and save it for another day! I also like to buy the tomato paste in a tube as it keeps better in the fridge.

Worcestershire sauce — again, this adds a deeper, richer flavor to the gravy as Worcestershire sauce is usually used to add umami flavor. If you don't have this in your pantry, you can opt for soy sauce.

seasoning — I use a combination of garlic powder, onion powder, dried oregano, kosher salt, and black pepper. You can use your favorite blend of seasoning if you prefer. Italian seasoning is also a great addition or swap for dried oregano.

mushrooms — use your favorite! I usually use white or cermini mushrooms, going with whichever one is on sale.

beef broth — I like to use low-sodium beef broth but you can use regular beef broth.

cornstarch — you'll need some cornstarch to make a cornstarch slurry to thicken the gravy. To make a cornstarch slurry, you just combine the cornstarch 1:1 with water!

How To Make Crockpot Beef Tips and Gravy

  • Add the beef, frozen pearl onions, tomato paste, Worcestershire sauce, garlic powder, onion powder, dried oregano, salt, and pepper to the slow cooker.
  • Mix until the beef and onions are well coated and the tomato paste is evenly coating everything.

  • Add the mushrooms and pour the beef broth into the slow cooker.
  • Stir well to combine.
  • Cook on low for 7 to 8 hours or on high for 4 to 5 hours, until the beef is tender.

  • About 30 minutes before serving, whisk together the cornstarch with 3 tablespoons of water in a small bowl until smooth. Stir the cornstarch mixture into the slow cooker. Finish cooking the last 30 minutes or until the gravy has thickened to your liking.
  • Garnish with chopped fresh parsley. and serve the beef tips and gravy over mashed potatoes.

Tips and Notes

  • If you have the time, you can sear the beef in a hot skillet with some oil! Then you can deglaze the skillet with some broth before adding it to the slow cooker. This adds additional flavor to the beef tips and gravy.
  • If you want the gravy to be even thicker, you can cook the last 30 minutes with the lid off so more liquid can evaporate.
  • If you want to add freshly minced garlic or smashed garlic cloves to the slow cooker, I totally recommend it!
  • I like to serve this with some mashed potatoes, but noodles/pasta, crusty bread/garlic bread, or rice are delicious options. You can also serve it with a side of salad to keep things lighter.
  • Leftovers can be stored in the fridge once cooled, in an airtight container, for up to 5 days. Reheat on the stove or microwave. You can also freeze leftovers in an airtight, freezer-safe container for up to 3 months. Thaw before reheating.

  • 1 bag frozen pearl onions, 12-oz or 14-oz
  • ¼ cup tomato paste
  • 3 tablespoons Worcestershire sauce

  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 8 ounces mushrooms, quartered
  • 2 cups beef broth, low-sodium
  • 3 to 4 tablespoons cornstarch
