Slow Cooker Sweet Potato Soup with Peanut Butter
This slow cooker sweet potato soup with peanut butter is my new favourite way to have sweet potato soup. Usually I do a play on Thai flavours or I go full traditional and have it super sweet, however, I was craving a savoury version so I decided to see what happens with a few flavour ideas I had in my head. Peanut butter being the secret ingredient was where I landed!
This slow cooker sweet potato soup is super easy to put together as after some peeling and dicing, you just put everything into the slow cooker, let it hang out for 4 hours on high or 7-8 hours on low, blend it up with an immersion blender, then add some milk and you're done! It's perfect if you're making this as a side dish as you don't have to spend too much time cooking this hands on and can focus on your main dish.

If not consuming right away, store in an airtight container in the fridge.
If you would like to freeze this, I recommend not adding in the milk right away. The portions that are frozen, let it thaw before reheating and stir in milk then.
