Slow Cooker Sweet Potato Soup with Peanut Butter

This slow cooker sweet potato soup with peanut butter is my new favourite way to have sweet potato soup. Usually I do a play on Thai flavours or I go full traditional and have it super sweet, however, I was craving a savoury version so I decided to see what happens with a few flavour ideas I had in my head. Peanut butter being the secret ingredient was where I landed!

This slow cooker sweet potato soup is super easy to put together as after some peeling and dicing, you just put everything into the slow cooker, let it hang out for 4 hours on high or 7-8 hours on low, blend it up with an immersion blender, then add some milk and you’re done! It’s perfect if you’re making this as a side dish as you don’t have to spend too much time cooking this hands on and can focus on your main dish.

What You Need To Make This Slow Cooker Sweet Potato Soup with Peanut Butter

How To Make This Slow Cooker Sweet Potato Soup with Peanut Butter

Peel and dice your sweet potatoes into cubes.

In the slow cooker, add in all your ingredients except for the milk and peanuts (for garnish).

Cook on low for 4 hours or high for 7-8 hours. If cooking on low, once in the last 2 hours, open the lid and give the ingredients a quick stir.

When done, blend until smooth (or to the consistency of your liking) with an immersion blender. Stir in milk until the soup is at the thickness you desire.

Serve with some toasted peanuts on top as garnish.

Tips on cooking and Storing This Sweet Potato Soup

If cooking on low, avoid opening up the slow cooker more than once as you want to retain as much heat as possible in the short cook time.

Out of peanut butter? Here’s how you can make your own at home with just peanuts and a food processor.

If not consuming right away, store in an airtight container in the fridge.

If you would like to freeze this, I recommend not adding in the milk right away. The portions that are frozen, let it thaw before reheating and stir in milk then.

Ideas of What To Serve with Sweet Potato Soup

  • bread sticks
  • grilled cheese
  • mac and cheese
  • crispy Brussels sprouts
  • grilled chicken

Substitutions

  • If you cannot have whole milk, coconut milk could be substituted for whole milk.
  • If you do not have an immersion blender, you can also puree the soup with a regular blender, just be sure to not to fill it to the brim and let the liquid cool a bit first.
  • If you want some heat to this, you can add some chili pepper powder in place of the cinnamon.

Is This Slow Cooker Sweet Potato Soup Vegan?

  • If you swap out the milk for coconut milk and use vegetable broth, then the soup will be vegan.
