Why You'll Love This Soup Recipe
- It's beyond easy to make. You just have to simmer the potatoes until they're cooked through and blend them up. It's really that easy.
- You don't need a ton of ingredients to make so it's quite budget-friendly! You only need four core ingredients to make this recipe. I do use additional ingredients such as salt and pepper to enhance the flavours of the potato soup but if you don't have any on hand, then that is perfectly fine.
- It's a versatile recipe as it's perfect for a light lunch or as a side dish or starter. I can enjoy this for any meal of the day!
Ingredients You'll Need
- butter – the more butter the better! While I use unsalted butter and add salt later, use salted butter to save you the extra step.
- onion — I use a small diced yellow onion but you can use a sweet onion, Spanish onion, or another variety of onion.
- potatoes — I use russet potatoes for this potato soup recipe. Yukon potatoes are a great alternative.
- water or stock — I use water to simmer my potatoes but if you want more flavour, simmering in a chicken or vegetable stock gives it a bump.
- milk — I use full-fat dairy milk for the best flavour.
- extras: if you have salt, pepper, and garlic powder, then that makes for a great addition to the potato soup.
How To Make This Potato Soup Recipe
- In a pot over medium heat, melt 2 tablespoons of butter and saute the diced onions until they have softened about 3 to 5 minutes. Set it ahead on a plate for later.
- Add the potatoes to the pot and fill with 4 cups of water. Bring to a boil then reduce to a simmer until the potatoes have cooked through, about 15 to 20 minutes.
- Drain most of the water, leaving half a cup of liquid in the pot with the potatoes.
- Add the milk and onions to the potatoes in the pot.
- Using an immersion blender, blend the soup until smooth. Add the rest of the butter and salt, pepper, and garlic powder as needed. Simmer and stir until everything is mixed together.
- Serve as is or top with your favourite toppings.
Tips and Notes
- My favourite toppings for potato soup are bacon crumbles, shredded cheese, and sour cream.
- For a thicker soup, remove more of the water you boiled the potatoes in.
- If you do not have an immersion blender, you can add everything to a regular blender. Just be careful of blending hot soup by making sure there's a way for the steam to release.
- For extra flavour, I like adding some air fryer roaster garlic to the soup.
Leftover potato soup can be stored for up to 5 days in an airtight container in the fridge. I usually just reheat the soup on the stovetop.
While others seem to have luck freezing potato soup, I don't usually freeze it since it's not recommended to freeze potato soup as it can change the texture.
