Why You'll Love This Recipe
- It's easy to make and can be adjusted to how you'd prefer for it to taste. I use beef broth which makes it a brown gravy, but you can easily make this with chicken broth as well.
- You don't need any drippings! So you can whip up a batch if you feel like serving gravy with your meal. If there are mashed potatoes on the menu, I love having gravy on the side.

Ingredients You'll Need
- butter — I use unsalted butter, but you can use salted butter and then adjust the amount of salt added to the gravy accordingly.
- flour — simple all-purpose flour is all you need. While I've never tried, gluten-free 1:1 flour might be able to be swapped in for a gluten-free gravy. Alternatively, you can thicken the gravy with cornstarch, but you'll need to cut the amount in half.
- beef broth — use your go-to beef broth. You can use low-sodium beef broth if you're worried about how salty the gravy will be.
- seasoning — since there are no drippings, you'll have to season the gravy generously. I use garlic powder, onion powder, salt, and pepper.
- Better than Bouillon — this is optional, but for an extra layer of flavor, add ½ teaspoon of this.
How To Make Gravy Without Drippings
- In a saucepan, melt the butter over medium heat.
- Add the flour once all of the butter melts.
- Stir continuously for about 2 minutes until a thick paste forms, forming a roux.
- Slowly add the beef broth to the saucepan in small amounts. Stirring or whisking continuously to incorporate ingredients.
- Add the seasoning and mix to combine.
- Taste the gravy and add more seasoning if needed.
Tips and Notes
- Do not add all of the broth into the roux at once. You want to whisk in the liquid slowly until the roux is well incorporated to prevent a lumpy gravy.
- Better than Bouillon helps the gravy taste a little meatier. If you don't have any, you can try adding a few drops of soy sauce or Worcestershire sauce.
- The gravy will continue to thicken as it cools, so do not overcook the gravy as you do not want the gravy to be too thick.
- For extra flavor, you can toast the flour beforehand. Simply toast the flour like you do nuts, in a large pan over medium heat, stirring continuously.
- If you want a Thanksgiving gravy, you can use turkey broth instead of beef broth.
- Store gravy in an airtight container for up to 5 days in the fridge and up to 3 months in the freezer.
- You can reheat it on the stovetop or the microwave while stirring occasionally. Add a little bit of water or broth to it, as it can thicken more as it reheats.
