Meatball Sub Casserole
It's been a while since we've had a meatball sandwich and boy, have I been craving it! I mean, it's hard not to like cheesy meatballs right? However, I'm not a fan of the mess that I always make with meatball subs as the meatballs try and escape the sandwich bread! So, I decided to make a casserole version instead. So why should you make this tonight?

What You'll Need to make this meatball casserole
- Pillsbury Country Style Biscuits
- marinara sauce: here's how I make homemade marinara if you've got time
- garlic powder
- onion
- asparagus
- shredded cheese
- frozen meatballs
How To Make This One Pot Meatball Sub Casserole
- Heat oven to 375F.
- Cut up the biscuit dough in half.
- Lightly grease a baking dish and place the biscuits into the it, mixing in the marinara sauce, garlic powder, onion, and asparagus.
- Place ¼ of the cheese on top of the mixture.
- Nestle in the meatballs into the baking dish.
- Add in ¼ of the cheese on top of the meatballs.
- Cover the dish with foil, bake for 30 minutes, uncover the foil, add the rest of the cheese on top, and bake for another 10-15 minutes, until the cheese have melted.
- Serve once done.
Recipes Variations
- Swap the onions and asparagus for different vegetables such as peppers, mushrooms, etc.
- Stir in fresh herbs such as rosemary and basil.
- Swap beef meatballs for chicken meatballs (here's how I make homemade chicken meatballs).
Tips and Notes
- If you like your biscuits a little bit crispier, arrange the biscuit dough so parts of it sticks up between the sauce and meatballs.
- To avoid extra liquid, I thaw my meatballs before baking.
- I only use half an onion since too many onions release too much liquid.
