Who doesn't love an easy one pot pasta? This Cheesy Salsa Beef Pasta uses a mix of salsa and beef stock to add flavor to it without having to put in a lot of work!

Why You'll Love This One Pot Beef Pasta Recipe

Get dinner on the table in less than an hour with this super easy one pot beef pasta. It only requires a handful of ingredients that you'll most likely already have in your pantry and fridge!

This one pot salsa can be as spicy or as mild as you'd like. I personally use mild salsa but a spicy salsa will definitely all a punch to the flavor. Same with the cheese - feel free to change up the cheese for more flavor, for example, you could use a Monterey jack cheese. This pasta resembles a cheeseburger pasta, so I'd say use whatever cheese you prefer on your cheeseburger in this one pot beef pasta!

Ingredients You'll Need

  • olive oil — I use olive oil, but you can also use avocado oil, vegetable oil, or whatever neutral oil you prefer to cook with.
  • ground beef — I use lean ground beef. If you use a fattier ground beef, you'll have to drain some of the fat from the pot or your pasta may be greasy.
  • salt & pepper
  • onion & garlic — did you know you can dice onion and mince garlic ahead of time and keep it in the freezer? This makes prepping for dinner so much easier and quicker.
  • salsa — I used mild salsa but a hot salsa is a great swap!
  • beef stock
  • pasta — I used macaroni pasta.
  • corn — fresh or frozen is fine. I used frozen for ease.
  • shredded cheese — I used marbled cheese, but you can use whatever cheese you prefer.

How To Make This Recipe

  • Add the olive oil to a large pot or Dutch oven over medium heat. Add in ground beef. Season with salt and pepper, and brown the beef for 4 to 5 minutes.

  • Add in the diced onion and minced garlic and sauté for another 2 minutes.
  • Add in the salsa and beef stock to the pot.

  • Add the pasta and stir to combine. Increase the heat until the liquid comes to a boil. Lower the heat to a simmer and let the pasta cook for 8 to 9 minutes, stirring occasionally so nothing gets stuck to the bottom.
  • Add in the shredded cheese and corn, stir, and cook for another 2 to 3 minutes or until the pasta has cooked through.

Recipes Variations

  • If you don't have ground beef, try ground pork, ground turkey, or ground chicken.
  • Corn can be replaced with any or more frozen vegetables to increase the veggie consumption!
  • Swap the cheese for a different type of cheese, such as Monterey jack, Swiss, cheddar, etc.

Tips and Notes

  • If your pasta needs more liquid, add ¼ cup of stock. If you find that your pasta has too much liquid, let the liquid cook off for longer or add additional shredded cheese to thicken the sauce.
  • The amount of beef stock you'll need really depends on your salsa. If you have a liquidy salsa, you'll need less stock, if you have a thicker salsa, you'll need more.
  • I use a 5.5L dutch oven for this one pot beef pasta.
  • Leftovers can be reheated on the stovetop or in the microwave. I store mine in airtight containers in the fridge for up to 4 days.

Equipment

  • Round Dutch Oven, 5.5 qt

Ingredients

  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • 1 small yellow onion, diced
  • 1 head garlic, minced
  • 1½ cup salsa, ~430 ml
  • 1 cup beef broth, extra ½ cup if needed
  • 2 cups macaroni pasta
  • 1 cup corn, fresh or frozen
  • 1 cup shredded cheese, or more

Instructions

  • Place olive oil in a large pot or dutch oven over medium heat. Add the ground beef. Season with salt and pepper and brown the beef for 4 to 5 minutes.
  • Add in the diced onion and minced garlic and sauté for another 2 minutes.
  • Add in the salsa, beef stock, and pasta. Stir to combine and increase the heat and bring the liquid to a boil.
  • Once boiling, turn the heat down to a simmer and let the pasta cook for 8 to 9 minutes, stirring occasionally so nothing gets stuck to the bottom.
  • Add in the shredded cheese and corn, stir, and let cook for another 2 to 3 minutes or until the pasta has cooked through. 

Notes

The amount of beef stock you'll need really depends on your salsa. If you have a liquidy salsa, you'll need less, if you have a thicker salsa, you'll need more.
