- I love lasagna, but I don't love all the time and effort it takes to make it. This simple tortellini lasagna casserole is a simplified version that I can make on a weeknight to satisfy my cravings for a hearty lasagna.
- Everything is made in one pan! The tortellini does not require cooking beforehand and the shallow Dutch oven allows me to cook the beef and melt the cheese without having to dirty another dish.
Ingredients You'll Need

olive oil — I use olive oil, but you can also use any neutral oil.
onion — I use a small yellow onion, but feel free to add more if you're a onion lover!
salt — I use kosher salt.
garlic — I cook some minced garlic with the onions, and you can also add extra garlic powder here to deepen the flavor.
ground beef — I use lean ground beef to avoid having to drain extra grease. You can use whatever beef you'd like, but just keep in mind the grease. In my experience, draining the grease from ground beef can be tedious.
garlic powder, onion powder, & Italian seasoning — feel free to add more or less of these seasonings! You can also switch things up and use a different seasoning combo.
marinara sauce — my go-to marinara sauce is Rao’s!
parmesan cheese — I personally prefer using shredded parmesan cheese, but you can also use grated parmesan, powdered parmesan, etc. Use what you have on hand!
ricotta cheese — I like using full-fat ricotta cheese! You can also use light ricotta cheese.
refrigerated cheese tortellini — did you know you don’t have to boil refrigerated tortellini first? Yeah!! Just add them to your sauce, simmer for 5 minutes and bake them in the oven!
mozzarella — the mozzarella creates a beautiful melty layer on top.
fresh basil — for garnish. It's not mandatory, but it's nice to have!
How To Make a Tortellini Lasagna

- Preheat the oven to 400F.
- In a large oven-safe skillet (such as a shallow dutch oven), heat the oil over medium heat and add the diced onions. Saute for 2 to 3 minutes. Add the salt and minced garlic and saute for another minute. (Feel free to add extra garlic powder and onion powder here for extra flavor).
- Add the ground beef.

- Cook for 3 to 4 minutes, making sure to break up the pieces with your spatula until the ground beef is almost cooked through, and add the garlic powder, onion powder, and Italian seasoning. Cook until the beef finishes browning.
- Add the marinara sauce, parmesan cheese, and ricotta cheese.

- Mix together until the cheese has melted.
- Add the tortellini and cook for another 5 to 6 minutes.

- Gently smooth everything in the skillet so that it’s even and flat.
- Remove from heat and add mozzarella cheese on top of everything. Transfer to the oven for 10 minutes or until the cheese is melty and bubbly. Optional: Broil for a couple of minutes to brown the tops of the cheese, if desired.
- Garnish with fresh basil and serve warm.

Recipes Variations
- Change up the tortellini flavors! There are so many different fillings, so you can change up the flavor with one simple swap.
- There are lots of different flavored marinara sauces that you can use instead! Sometimes I like to use spicy marinara for a bit of heat!
- Switch out the mozzarella cheese for another melty cheese such as provolone or Gouda!
- Swap the ground beef for another ground meat such as ground pork, chicken, or turkey. You can also use a combination such as half ground beef and half ground pork.
- Add some spinach to the dish! Stir in the spinach when you stir in the tortellini.
- Add some mushrooms! Saute them before the onions.

- Leftovers: Store leftover baked tortellini lasagna in an airtight container in the refrigerator for up to 5 days. You can quickly reheat the leftovers in the microwave until warmed through.
- Freezer Instructions: This tortellini lasagna casserole freezes so well! Store in a freezer-safe, airtight container. I prefer using an aluminum foil tray as I don't have to worry about glass or ceramic cracking from the temperature change. Make sure to tightly wrap the casserole in plastic wrap, then a layer of tin foil, to help prevent freezer burn, and freeze for up to 3 months. Thaw it overnight in the fridge when ready to eat, and reheat it in the oven or microwave until hot and bubbly.
