About this Slow Cooker Salsa Chicken
Guys, you're going to love this recipe! It's so quick to put together, you more than likely have most of the ingredients on hand, and if you don't, it's a short shopping list. I love when dinner pretty much makes itself and this is one of those recipes. I'm serious, the most laborious work you'll be doing is opening the jar of salsa (if you have noodle arms like myself). This slow cooker shredded salsa chicken practically makes itself!
Plus, it's a freezer friendly recipe. If you want, you can double or triple this recipe and freeze this slow cooker shredded chicken for later! All you have to do is thaw and reheat until it's been warmed through and dinner is ready!
Ingredients You'll Need To To Make This Shredded Chicken
- chicken breasts: boneless skinless
- lime: you need ¼ cup of lime juice and that comes out to be around 1.5-2 limes’ worth.
- taco seasoning: I used a store-bought mix
- salsa: go as mild or as spicy as you’d like! I personally got mild. The jar pictured is 2 cups worth.
- cilantro: I don’t add too much as I find the flavour to be overpowering. However, you may prefer more cilantro than I do!
How To Make This Saucy Shredded Chicken in the Slow Cooker
- In your slow cooker, add in the chicken breasts, lime juice, and taco seasoning.
- Layer salsa and cilantro on top of the chicken.
- Set the slow cooker to high for 3 hours. Once done, shred the chicken, and toss to coat the chicken to ensure it’s coated with sauce.
- Serve immediately with some more lime juice drizzled on top. I like to have them in tacos so on a flour tortilla, add lettuce, the shredded chicken, shredded cheese, onions, avocado, and sour cream!
Variations
- Swap chicken breasts for chicken thighs if that's what you have on hand.
- Add some honey or brown sugar to add sweetness.
- Add some cayenne pepper powder to spice it up.

- In a burrito: with some black or pinto beans and shredded greens

- ¼ cup lime juice + extra half a lime to serve
- 1 tablespoon taco seasoning
- 2 cups salsa
