Whenever I'm not sure what to make for dinner, shredded chicken is usually the answer. It's easy to make, it can be used in a variety of ways, and I can freeze the leftovers. What's not to love? This time, I went in a spicier direction and pulled out a can of chipotles in adobo sauce that's been hanging out in my pantry for a while for this slow cooker chipotle chicken with honey. It adds such a nice heat to the chicken!

Ingredients You'll Need
- chicken — you can use boneless, skinless chicken thighs or breasts, whichever you prefer.
- honey — for sweetness.
- onion powder
- garlic powder — you can use fresh minced garlic if you prefer.
- smoked paprika — if you prefer a sweeter flavour, you can use sweet paprika.
- salt and pepper
- chipotle — I use chipotles from a can of chipotles in adobo plus the adobo sauce
- chicken stock — use low sodium chicken stock if you prefer something less salty.
- lime juice — I recommend fresh lime juice for the best flavor.
How To Make This Slow Cooker Chipotle Honey Shredded Chicken Recipe
- Combine the boneless skinless chicken, honey, chicken stock, onion powder, garlic powder, paprika, salt, pepper, and chipotle chiles, and adobo sauce in a slow cooker.
- Toss to coat the chicken fully with the sauce.
- Cook for 3 hours on high and up to 5 hours on low. Chicken breasts are cooked through when the internal temperature reaches 165˚F (74˚C).
- Using two forks, coarsely shred the chicken in the sauce.
- Stir in the lime juice.
- Add more salt or lime juice, to taste.
Recipes Variations
- Chicken thighs and chicken breasts can be swapped. Chicken thighs will have a little more fat and more moisture compared to chicken breasts, so it depends on if you'd like to have that extra fat or not. Alternatively, you can do a mix of both. It's up to you.
- Make this sweeter with extra honey or brown sugar.
- Make the shredded chicken crispier by transferring the shredded chicken to a sheet pan and broil in the oven for 2-5 minutes on the middle rack, keeping an eye on it throughout. Be sure that the shredded chicken has sauce on it to prevent it from drying out.
Tips and Notes
- I recommend using freshly squeezed lime juice. Bottled lime juice just doesn't have the same bright flavor to it. Some bottled varieties have a bitter aftertaste as well.
- Slow cooker liners help make clean up easier as this slow cooker chipotle chicken is quite saucy.
- This recipe is on the spicier side. Feel free to cut the amount of chipotle peppers and adobo sauce added to the recipe to make it a little milder. You can also serve with some sour cream to balance out the heat.
- I find the easiest way to shred the chicken is using two forks. You can also purchase a meat shredder.

To store the leftover crockpot chipotle honey chicken, allow the shredded chicken to cool to room temperature and then transfer it to an airtight container. Store in the fridge for up to 5 days. Reheat in the microwave.
To freeze chipotle honey chicken, allow the shredded chicken to cool to room temperature and transfer it to a freezer-safe bag and freeze for up to three months. Thaw fully before reheating.
